Will this work on stainless steel?

Yes, but only very thin stainless steel up to about 0.5mm. The recommended max for regular steel is 0.8mm. Stainless is harder. Stick to the lower end of the thickness range. For thicker stainless, you need a different tool.

The edges are surprisingly smooth. Not razor-sharp like a shear cut. I ran my finger along the cut and it was safe to handle. For decorative work, you might still want to deburr. For functional cuts, it's fine as-is.
